Gooey Rocky Road Bars

Gooey Rocky Road Bars

Gooey and delicious, these bars bake up quickly with very little fuss.  Feel free to swap in almonds or pecans for the walnuts to suit your taste.

Ingredients
2 spray(s) cooking spray
4 oz chocolate wafer(s)
3 Tbsp unsalted butter, melted
3/4 tsp table salt, (or less to taste)
1/2 cup(s) mini chocolate chips
1/4 cup(s) walnut(s), coarsely chopped
1/2 cup(s) fat free sweetened condensed milk
1/2 cup(s) mini marshmallows, coarsely chopped

Instructions
1. Preheat oven to 350°F. Line an 8-inch square baking pan with parchment paper (or coat with cooking spray - though the bars will be a little trickier to remove from the pan).
2. Using a food processor, process wafers into fine crumbs (or place wafers in a large, sealed zip-close bag and crush with a rolling pin). Add butter and salt to crumbs and pour into prepared pan; press down to form an even layer of crust.
3. In a small bowl, combine chocolate chips and walnuts; sprinkle evenly over crust. Drizzle milk over top; sprinkle with marshmallow pieces.  Bake until chocolate melts and marshmallows begin to brown, about 15 minutes. Cool completely in refrigerator before slicing into 16 pieces. Yields 1 piece per serving.

Notes
Spray your knife with cooking spray before chopping the marshmallows to help keep them from sticking to the blade.

KEEP CALM AND EAT TREATS

    An essential part of sticking with a long term losing and maintenance program is to ENJOY the journey. When you take a FEW minutes to plan your day in the morning, figure out if you'll be going out to eat or want to invest in a TREAT once or twice during the day.
Once you've figured out the treat- focus it
How much of it will you eat?
When will you eat it?
Commit to having the planned portion at the planned time
    Then you can KEEP CALM, STAY FOCUSED and LOOK FORWARD to a little treat in your day! Make it a weekend goal.

Do not eat before going to bed. Even if you feel a bit hungry, remember that your body doesn’t know your plans of going to sleep soon. It might think you have a long working night ahead of you and it’s time to “fuel up”. Since you don’t need energy for sleeping, you don’t need to eat, otherwise right after you fall asleep with a full stomach, all the food you put in will go directly to storage for future use, as in settling down on your body parts as fat. If you feel really hungry, then eat some fruit to fill you up a bit and go to sleep with a clear conscience.

Here is a new variation to try!

Make the Recipe in Water Bottles.......Place In the Refrigerator and Just Take 2 or 3 Out to take with you, if you know you won't be home for long periods of time!!!

The longer it sits, the better it tastes. You can eat them as well but they are intended as flavoring and still work, so that is a personal choice. The Vitamin C turns fat into fuel, the tangerine increases your sensitivity to insulin, and the cucumber makes you feel full. Try it for 10 days and see what you think!

Ingredients per 8 oz serving

Water
1 slice grapefruit
1 tangerine
½ cucumber, sliced
2 peppermint leaves
Ice – as much as you like

Directions
Wash grapefruit, tangerine cucumber and peppermint leaves. Slice cucumber, grapefruit and tangerine (or peel). Combine all ingredients (fruits, vegetables, 8 oz water) into water bottles.

Close Cap Tightly, Shake, Put In The Fridge Over Night, Take Out a Few Bottles for the Next Day & Enjoy!
