Cranberry-Orange Glazed Ham

There is nothing easier to prepare than a ham, but it always makes a meal seem special. And it's perfect for the upcoming holiday week!
Ingredients
2 Tbsp Juice, orange, frozen concentrate, unsweetened, undiluted
¼ cup(s) Cranberry sauce, canned
2 Tbsp Sugar, brown
1 Tbsp Whole cloves
2 pound(s) Ham, roasted, lean only
1 medium Mandarin oranges (tangerine), cut into wedges
Instructions
1. Preheat oven to 375°F.
2. For glaze, in a small saucepan over low heat, stir together orange juice concentrate, cranberry sauce and brown sugar, whisking until smooth.
3. Stick cloves into top of ham. Place ham in a baking dish and brush with some of the glaze. Bake for 1 hour, brushing with glaze every 15 minutes.
4. Slice thinly, garnish with orange wedges and serve.

Why do you want to lose weight? The more answers you have, the stronger your motivation can be.
When you need to get stuff done, writing a to-do list can help. And when sticking to that to-do list becomes a little harder, writing a "why" list can be just the fix. That’s because the more reasons you have to do something — whether it’s reorganizing your closet or sticking with healthy behaviors — the more likely you are to follow through with the task. It's like a benign pile-on that makes resistance pretty much futile. Keep an actual list of these reasons on hand to go over whenever you feel your motivation dipping. It can be the jolt of enthusiasm you need to refocus on your goals.

Turkey, Apple and Blue Cheese Wrap, PPV = 7
Dry, leftover Thanksgiving turkey sandwiches are a thing of the past. This wrap boasts juicy apples, peppery arugula and a blue cheese-spiked cream cheese spread. #ServeItUpSaturday
Ingredients:
1 Tbsp blue cheese, softened
1 Tbsp fat-free cream cheese, softened
1/8 tsp black pepper, freshly ground (or to taste)
1 medium whole wheat tortilla(s), warmed according to package directions
1/2 cup(s) arugula, baby leaves
1/2 medium fresh apple(s), diced
2 oz cooked light meat turkey chopped or diced
Instructions:
In a small cup, mash together blue cheese, cream cheese and pepper with a fork; spread onto tortilla. Top tortilla with arugula, apple and turkey, leaving about 1-inch of space from edges; tuck in sides of tortilla and then roll it up tightly (slice in half, if desired). Yields 1 wrap per serving.
Notes:
Sprinkle arugula with lemon juice or toss with you favorite light vinaigrette, if desired (could affect PointsPlus value).

"Brownie Cupcake Bites!"

Ingredients:
21 oz regular brownie dry mix
1/2 cup(s) water
1/2 cup(s) unsweetened applesauce
2 item(s) (large) egg white(s), lightly beaten
2 cup(s) lite whipped topping
1 3/4 oz candy corn, 36 pieces
Instructions:
Preheat oven to 350ºF. Line 36 mini muffin tin holes with mini cupcake wrappers. In a large mixing bowl, combine brownie mix, water, applesauce and egg whites. Mix 50 times with a wooden spoon (use 50 strokes); do not under mix. Pour brownie mixture into prepared muffin tins, about 1 tablespoon per hole. Bake cupcakes until a tester inserted in center of a cupcake comes out clean, about 12 minutes. Remove from oven and cool completely; remove cupcakes from pan. Before serving, decorate each cooled cupcake with a tablespoon dollop of whipped topping and 1 piece of candy corn.
Yields 1 cupcake per serving.
Notes:
If you're not a fan of candy corn, get festive with orange and black sprinkles (could affect PointsPlus values).

"Baked Apples with Vanilla Drizzle"

Juicy, sweet and flavorful. A drizzle of vanilla yogurt and scattering of crunchy pecans is a delicious finishing touch.
Ingredients
6 medium fresh apple(s), Golden Delicious-variety
3/4 cup(s) raisins, chopped, or a combination of dried fruit bits*
1 cup(s) apple cider
2 Tbsp maple syrup
1/4 cup(s) low fat vanilla yogurt
2 Tbsp chopped pecans, toasted
Instructions
Preheat oven to 350°F.Cut a thin slice across bottom and top of apples. Use a melon baller or sharp knife and spoon to core apples, making sure not to go all the way through to the bottom. Stuff each apple with 2 tablespoons raisins or dried fruit. Place apples in a baking pan. In a small bowl, combine cider and maple syrup; pour around apples. Bake, basting thoroughly with pan juices every 10 minutes, until apples are soft and cooked through, about 55 to 65 minutes total. Before serving, drizzle apples with pan sauce, yogurt and pecans. Yields 1 apple, 2 teaspoons yogurt and 1 teaspoon pecans per serving.
Notes
*Most supermarkets carry dried fruit bits but in a pinch feel free to substitute an equal amount of diced dried apricots, raisins, currants, cranberries, cherries, or whatever dried fruit you have on hand.

Feta and Spinach Dip
2ppv = 1 serving (4 TBS)
Ingredients
4 cup(s) fresh spinach, chopped (about 2 oz)
1/2 cup(s) low fat cream cheese
1/2 cup(s) fat free sour cream
1/4 cup(s) crumbled feta cheese
1/4 cup(s) chives, fresh, minced, divided
2 tsp fresh lemon juice
1/4 tsp black pepper
1/4 tsp table salt, or less to taste (optional)
Instructions
Place spinach in a small saucepan with 2 cups of water. Bring to a boil over high heat and then cook for 1 minute; drain well. Place spinach, cream cheese, sour cream, feta cheese, 2 tablespoons chives, lemon juice and pepper in a blender; puree. Taste dip and add salt, if desired. Spoon dip into a serving bowl and sprinkle with remaining 2 tablespoons chives. Yields about 4 tablespoons dip per serving.
Notes
For a nice flavor boost, substitute sorrel or watercress for half the spinach and follow the recipe directions above.

It’s so much more than your average roast beef sandwich.
Ingredients:
2 Tbsp reduced-calorie mayonnaise
1 1/4 tsp store-bought horseradish
1/8 tsp black pepper, freshly ground (or more to taste)
4 slice(s) reduced-calorie rye bread, toasted
4 oz deli style roast beef slice(s), thinly sliced (four 1-oz slices)
1 medium plum tomato(es), cut into eight slices
1 cup(s) arugula, baby leaves
Instructions:
In a small cup, mix together mayonnaise, horseradish and pepper until blended. Spread about 1 1/2 tsp mayonnaise mixture on each slice of bread. Top each of 2 slices of bread with 2 slices roast beef, 4 slices tomato and 1/2 cup arugula. Cover with remaining bread slices and serve. Yields 1 sandwich per serving.
Notes:
Plum tomatoes are a good choice for this sandwich because they are less juicy than other tomatoes and won't make the bread soggy.

Grilling this holiday weekend?
Here's a dessert to throw on there too!
"Grilled Pineapple with Coconut Sorbet"

6 Tbsp dried shredded and sweetened coconut meat
6 slice(s) pineapple, fresh, cored (about 1/2-inch-thick)*
1 Tbsp honey
1 1/2 cup(s) sorbet, coconut
Instructions:Heat a grill or stove-top grill pan.
Spread coconut evenly on a microwave-safe plate; microwave on high, tossing until lightly browned with some white shreds, checking after 30 second intervals.**
Brush pineapple with honey; grill until pineapple is lightly charred and tender, about 3 to 4 minutes per side.
To serve, place 1 pineapple slice on each of 6 plates; top each with 1/4 cup sorbet and sprinkle each with 1 tablespoon coconut. Serve immediately. Yields 1 per serving.

And every well-earned "win" ought to be celebrated. That goes double for activity, especially if working out isn't (yet!) on your list of favorite things to do. Still time for summer grilling! This side dish is a perfect accompaniment to fajitas. When fresh corn isn't in season, toss the butter mixture with cooked frozen corn and cilantro.
Grilled Corn with Smoked Paprika-Lime Butter
Serves = 6
PointsPlus value per serving = 3
Ingredients:
2 spray(s) cooking spray
6 medium corn on the cob, husked, silks removed
8 tsp light butter, or 2 2/3 Tbsp
4 tsp fresh lime juice, or to taste
1 tsp paprika, smoked variety
1/8 tsp table salt, or to taste
3 Tbsp cilantro, fresh, chopped
Instructions:
Coat grill rack with cooking spray. Preheat grill to medium-high. Grill corn, turning occasionally, until lightly charred in spots and tender, about 10 minutes. Meanwhile, in a microwave-safe bowl, combine butter, lime juice, paprika and salt; microwave on high until melted, about 20 seconds. Put corn in a large serving bowl and drizzle with butter mixture and cilantro; toss to coat. Sprinkle with more lime juice and salt, if desired. Yields 1 ear of corn with about 1 1/2 teaspoons butter mixture per serving.
